Physicochemical and Enzymatic Modification of Gums: Synthesis, Characterization and Application

Natural gums are polysaccharides consisting of multiple sugar units linked together via glycosidic linkages. Most natural gums reveal appropriate safety for oral consumption in the form of food additives or drug carriers.
